Co to v\u016fbec znamen\u00e1? A je takov\u00e1 prezentace v\u016fbec spr\u00e1vn\u011b?<\/div>\n<p><!--more--><\/p>\n<div id=\"art-text\" class=\"text\">\n<p>No, pokud bych cht\u011bl b\u00fdt p\u0159\u00edsn\u00fd, neznamen\u00e1 to v\u016fbec nic (proto\u017ee to m\u016f\u017ee znamenat cokoli), a spr\u00e1vn\u011b to tedy asi nen\u00ed. Kdy\u017e vezmeme za kliku takov\u00e9 restaurace nebo baru a vstoup\u00edme, obvykle zjist\u00edme, \u017ee t\u00edm slovem \u201edruh\u201c je my\u0161lena zna\u010dka, a \u017ee tedy dan\u00fd podnik nab\u00edz\u00ed piva od n\u011bkolika pivovar\u016f. \u010casto ale jedin\u00e9ho pivn\u00edho stylu: sam\u00e9 le\u017e\u00e1ky. To moc velk\u00e1 p\u0159ednost nen\u00ed: stejn\u00e9 pivo v r\u016fzn\u00fdch drobn\u00fdch nuanc\u00edch. To je jako kdyby v prodejn\u011b maso \u2013 uzeniny nab\u00edzeli jen sam\u00e9 hov\u011bz\u00ed p\u0159edn\u00ed, ale od osmi r\u016fzn\u00fdch \u0159ezn\u00edk\u016f, a \u0159\u00edkali tomu r\u016fzn\u00e9 druhy masa.<\/p>\n<p>Nebo zjist\u00edme, \u017ee maj\u00ed piva dokonce jen jedin\u00e9 zna\u010dky, pouze r\u016fzn\u00e9 produkty: sv\u011btl\u00e9, tmav\u00e9, polotmav\u00e9, v\u00fd\u010depn\u00ed, speci\u00e1l. V\u0161e ale op\u011bt spodn\u011b kva\u0161en\u00e9 lagery a ze stejn\u00e9 fabriky. Proto hlasuji pro to, abychom slovo \u201edruh\u201c p\u0159i inzerov\u00e1n\u00ed pivn\u00ed nab\u00eddky \u00fapln\u011b vypustili, proto\u017ee ka\u017ed\u00fd si ho m\u016f\u017ee vylo\u017eit jinak. A nahra\u010fme ho slovem \u201e<strong>zna\u010dka<\/strong>\u201c tam, kde chceme prezentovat produkty r\u016fzn\u00fdch v\u00fdrobc\u016f, nebo slovem \u201e<strong>styl<\/strong>\u201c tam, kde chceme prezentovat opravdu pestrou nab\u00eddku piv li\u0161\u00edc\u00edch se z\u00e1sadn\u011b zp\u016fsobem v\u00fdroby a pou\u017eit\u00fdmi surovinami.<\/p>\n<p>Ne ka\u017ed\u00fd barman si to m\u016f\u017ee dovolit a ne ka\u017ed\u00fd bar se v\u016fbec chce py\u0161nit pest\u0159ej\u0161\u00ed nab\u00eddkou piv na \u010depu, ale pokud tomu tak je, m\u011bl by sv\u00fdm portfoliem pokr\u00fdt hlavn\u00ed pivn\u00ed styly a tak\u00e9 strukturu popt\u00e1vky podle sv\u00e9 specifick\u00e9 klientely. M\u016f\u017eeme si to uk\u00e1zat na modelov\u00e9m p\u0159\u00edkladu. M\u00e1me (nebo chceme m\u00edt) m\u00edt deset v\u00fd\u010depn\u00edch kohout\u016f. Co na nich nab\u00edzet a v jak\u00e9 struktu\u0159e?<\/p>\n<p>Za\u010dn\u011bme odspodu. Na jenom kohoutu by m\u011blo b\u00fdt n\u011bjak\u00e9 leh\u010d\u00ed pivo. Mezi n\u00e1v\u0161t\u011bvn\u00edky se mohou vyskytnout turist\u00e9, sportovci nebo prost\u011b lid\u00e9, kte\u0159\u00ed si v danou chv\u00edli nemohou dovolit mohutn\u011bj\u0161\u00ed pivo. T\u0159eba dobr\u00fdch des\u00edtek \u010di dev\u00edtek se d\u011bl\u00e1 \u010d\u00edm d\u00e1l v\u00edc. Nebo m\u016f\u017ee funkci leh\u010d\u00edho piva plnit n\u011bjak\u00fd summer ale, lehk\u00e1 p\u0161enice, witbier, leh\u010d\u00ed kysel\u00e1 belgie nebo leh\u010d\u00ed New England&#8230; no, kdy\u017e tak o tom p\u0159em\u00fd\u0161l\u00edm, mo\u017en\u00e1 by to cht\u011blo na leh\u010d\u00ed piva kohouty dva, jeden na spodn\u011b kva\u0161en\u00fd a jeden na svrchn\u011b kva\u0161en\u00fd kousek.<\/p>\n<p>Poj\u010fme d\u00e1l. Jsme v \u010cesku, a je tedy nemysliteln\u00e9 (pokud nem\u00e1me bar vysloven\u011b speci\u00e1ln\u011b orientovan\u00fd t\u0159eba jen na belgick\u00e1 piva), abychom se obe\u0161li bez le\u017e\u00e1ku. A nejlep\u0161\u00ed bude, kdy\u017e mu v\u011bnujeme kohouty hned dva, jeden pro zn\u00e1m\u011bj\u0161\u00ed a levn\u011bj\u0161\u00ed lager (\u010d\u00e1st klientely vy\u017eaduje n\u011bco, co m\u00e1 vyzkou\u0161en\u00e9), jeden pro n\u011bjak\u00fd hodn\u011b dobr\u00fd kousek z mikropivovaru.<\/p>\n<p>Je\u0161t\u011b jeden kohout bychom mohli v\u011bnovat spodn\u011b kva\u0161en\u00fdm piv\u016fm stup\u0148ovitosti 11 \u2013 13, a to kousku tmav\u00e9mu, polotmav\u00e9mu, chmelen\u00e9mu zastudena nebo jinak zaj\u00edmav\u00e9mu. Zde budeme trochu z\u00e1pasit s popt\u00e1vkou, bude z\u00e1le\u017eet na konkr\u00e9tn\u00ed klientele a na tom, jak tyto kusy budeme um\u011bt prezentovat.<\/p>\n<p>Zb\u00fdv\u00e1 n\u00e1m p\u011bt kohout\u016f. Z jednoho m\u016f\u017ee trvale t\u00e9ci n\u011bjak\u00e1 syt\u00e1 pln\u00e1 p\u0161enice, nejl\u00e9pe bavorsk\u00e9ho typu. Nejm\u00e9n\u011b p\u011bt takov\u00fdch, kter\u00e9 si um\u011bj\u00ed celoro\u010dn\u011b dr\u017eet kvalitu, na dom\u00e1c\u00edm trhu najdeme.<\/p>\n<p>Na jednom kohoutu bychom mohli st\u0159\u00eddat bocky, tedy velmi siln\u00e1 spodn\u011b kva\u0161en\u00e1 piva nej\u010dast\u011bji polotmav\u00e1, st\u0159edn\u011b a\u017e m\u00edrn\u011b prokva\u0161en\u00e1, s maxim\u00e1ln\u00ed plnost\u00ed a robustnost\u00ed, aneb, jak \u0159\u00edk\u00e1me my z Chebu, full taste. Hodn\u011b z t\u011bchto piv je sez\u00f3nn\u00edch, o to jsou atraktivn\u011bj\u0161\u00ed, ale zase je t\u0159eba je aktivn\u011b vyhled\u00e1vat.<\/p>\n<p>Na dal\u0161\u00edch dvou kohoutech by m\u011bla rotovat velmi ho\u0159k\u00e1 piva typu IPA s americk\u00fdmi chmely. Jejich nejvy\u0161\u0161\u00ed konjunktura u n\u00e1s u\u017e asi pominula, ale mnoho z n\u00e1s pivomilc\u016f si ve\u010der bez takov\u00e9ho pot\u011b\u0161en\u00ed skoro neum\u00ed p\u0159edstavit. Jedno z nich m\u016f\u017ee b\u00fdt sp\u00ed\u0161e session IPA, druh\u00e9 n\u011bjak\u00e1 tuplovan\u00e1 \u010di triplovan\u00e1 IPA s ho\u0159kost\u00ed t\u0159eba 90 IBU \u010di v\u00edc.<\/p>\n<p>A jestli dob\u0159e po\u010d\u00edt\u00e1m, zb\u00fdv\u00e1 posledn\u00ed kohout. A ten v na\u0161\u00ed p\u0159ehl\u00eddce nelze v\u011bnovat ni\u010demu jin\u00e9mu ne\u017e such\u00e9mu stoutu n\u011bjak\u00e9 vy\u0161\u0161\u00ed ligy. Takov\u00fd m\u016f\u017ee b\u00fdt sta\u0159en ve d\u0159ev\u011b, m\u016f\u017ee b\u00fdt zb\u011bsile chmelen\u00fd (i zastudena) americk\u00fdmi chmely), plnost, pra\u017eeninka a such\u00e9 dozn\u00edv\u00e1n\u00ed zaru\u010d\u00ed, \u017ee ho\u0159kost nebude vyl\u00e9zt moc nahoru.<\/p>\n<p>Cel\u00fd uveden\u00fd desetikohoutov\u00fd model je jen jednou z mnoha mo\u017enost\u00ed, jak si sestavit dlouhodob\u00e9 pivn\u00ed portfolio, v\u0161e z\u00e1le\u017e\u00ed na barmanov\u011b vkusu a hlavn\u011b na m\u00edstn\u00ed popt\u00e1vce. Nav\u00edc se mus\u00ed nab\u00eddka pr\u016fb\u011b\u017en\u011b prom\u011b\u0148ovat. Ale z\u00e1kladn\u00ed strukturu podobnou t\u00e9to nab\u00eddnut\u00e9 by asi sestava m\u00edt m\u011bla.<\/p>\n<p>Jist\u011b, bude zaznamen\u00e1vat sez\u00f3nn\u00ed v\u00fdkyvy, v l\u00e9t\u011b bude asi v\u00edc t\u011bch leh\u010d\u00edch, v zim\u011b v\u00edc t\u011bch pln\u011bj\u0161\u00edch kousk\u016f. Ale zase nelze dopustit (jak jsem mnohokr\u00e1t za\u017eil), \u017ee p\u016fl kohout\u016f bylo v\u011bnov\u00e1no d\u00fd\u0148ov\u00fdm ejl\u016fm, proto\u017ee jsou zrovna v nab\u00eddce, jindy p\u016flka ho\u0159k\u00fdm ip\u00e1m, sice skv\u011bl\u00fdm, ale navz\u00e1jem velmi podobn\u00fdm, nebo p\u016flka sam\u00fdm plnotu\u010dn\u00fdm bock\u016fm, kter\u00e9 pak nen\u00ed \u010d\u00edm propl\u00e1chnout, nebo p\u016flka sam\u00fdm p\u0161enic\u00edm, podobn\u00fdm si jako p\u0161enice p\u0161enici.<\/p>\n<p>Roz\u010dlen\u011bn\u00ed kohout\u016f na sekce podle pivn\u00edch styl\u016f n\u00e1m pom\u016f\u017ee zachovat rovnov\u00e1hu v nab\u00eddce a pro z\u00e1kazn\u00edky je p\u0159ehledn\u00e9. A hlavn\u011b n\u00e1m nedovol\u00ed nap\u0159\u00ed\u0161t\u011b pou\u017e\u00edt ten v\u0161e\u0159\u00edkaj\u00edc\u00ed a tedy nicne\u0159\u00edkaj\u00edc\u00ed obrat \u201edruhy piva\u201c.
