A dobr\u00fd servis je z\u00e1kladem \u00fasp\u011bchu i u piva.<\/div>\n<p><!--more--><\/p>\n<div id=\"art-text\" class=\"text\">\n<p>Nemysl\u00edm, \u017ee v\u0161ichni barmani, u nich\u017e je serv\u00edrov\u00e1n\u00ed piva \u010dasto jen dopl\u0148kem jejich hlavn\u00edho sortimentu, te\u010f budou houfn\u011b kupovat spr\u00e1vn\u00e9 pivn\u00ed sklenice pro jednotliv\u00e9 pivn\u00ed styly \u010di po\u0159izovat si dal\u0161\u00ed u\u017eite\u010dn\u00e9 technick\u00e9 z\u00e1zem\u00ed, ale z\u00e1kladn\u00ed pravidla se daj\u00ed dr\u017eet i tam, kde pivo nen\u00ed t\u00edm hlavn\u00edm l\u00e1kadlem pro hosty. Nato\u017e v barech, kter\u00e9 si na sv\u00e9 pivn\u00ed nab\u00eddce zakl\u00e1daj\u00ed.<\/p>\n<p>Tak\u017ee paragraf \u010d\u00edslo jedna: \u010distota. Zd\u00e1 se to b\u00fdt nadbyte\u010dn\u00fdm apelem, ale \u010detn\u00e9 zku\u0161enosti p\u0159esv\u011bd\u010duj\u00ed o opaku. V\u0161ichni zn\u00e1me podivn\u011b prchavou p\u011bnu, trhanou p\u011bnu nebo \u0159et\u00edzky bublinek sp\u011bchaj\u00edc\u00edch ze dna nebo ze st\u011bn sklenice k hladin\u011b. T\u00e9m\u011b\u0159 v\u017edy za to m\u016f\u017ee ne samo pivo, ale pr\u00e1v\u011b \u0161patn\u011b umyt\u00e1 sklenice. Sta\u010d\u00ed nepatrn\u00e1 mastn\u00e1 skvrnka a sklenice piva vypad\u00e1 jak jacuzzi. Nebudu popisovat r\u016fzn\u00e9 typy za\u0159\u00edzen\u00ed na myt\u00ed sklenic, to je v\u011bc\u00ed ka\u017ed\u00e9ho barmana, ale v z\u00e1sad\u011b lze \u0159\u00edci, \u017ee i s nejjednodu\u0161\u0161\u00edm vybaven\u00edm lze m\u00edt dokonale \u010dist\u00e9 sklenice.<\/p>\n<p>A sklenice mokr\u00e1, nebo such\u00e1? P\u0159izn\u00e1m se, \u017ee toto t\u00e9ma zu\u0159\u00ed v odborn\u00fdch kruz\u00edch l\u00edt\u00e9 boje, ale v\u00edce munice maj\u00ed podle m\u011b stoupenci mokr\u00e9 varianty. V\u016fbec ne kv\u016fli tomu, \u017ee such\u00e1 sklenice bud\u00ed dojem, \u017ee m\u016f\u017ee b\u00fdt zapr\u00e1\u0161en\u00e1 (proto\u017ee zapr\u00e1\u0161en\u00e1 na baru nem\u00e1 co d\u011blat), ale hlavn\u011b proto, \u017ee voda vyt\u011bsn\u00ed ze skla vzduchov\u00e9 mikrobublinky nebo je ut\u011bsn\u00ed (sklo v\u016fbec nen\u00ed hladk\u00e9, jak se na prvn\u00ed pohled zd\u00e1, sta\u010d\u00ed se kouknout mikroskopem: je to krajina pln\u00e1 \u00fadol\u00ed, jeskyn\u00ed, ka\u0148on\u016f a str\u017e\u00ed), tak\u017ee vzduch pak nep\u0159isp\u00edv\u00e1 k oxidaci piva. A koneckonc\u016f namo\u010den\u00edm se zbav\u00edme p\u0159eci jen mo\u017en\u00e9ho n\u011bjak\u00e9ho zbytkov\u00e9ho chloupku z ut\u011brky. A neberte argumenty pro suchou sklenici od barman\u016f, kte\u0159\u00ed cel\u00fd \u017eivot barmani\u010dili kdesi v exotick\u00fdch kon\u010din\u00e1ch, kde voda m\u016f\u017ee b\u00fdt zdrav\u00ed a\u017e \u017eivotu nebezpe\u010dn\u00e1, ani t\u011bch ze z\u00e1mo\u0159\u00ed, kde snad ani neznaj\u00ed vodu bez sapon\u00e1t\u016f.<\/p>\n<p>A co mrazit, nemrazit? V pr\u016fsmyku Sonora v Kalifornii je star\u00fd bar, pamatuj\u00edc\u00ed je\u0161t\u011b pion\u00fdry na dostavn\u00edc\u00edch. V n\u011bm za barem takov\u00fd skoro dvojn\u00edk Kirka Douglase. M\u011bl kupodivu asi p\u011bt velmi zaj\u00edmav\u00fdch piv, na\u0161e \u010dty\u0159\u010dlenn\u00e1 expedice je sjela v\u0161echny, ale u prvn\u00edho jsme v\u0161ichni za\u0159vali N\u00c9\u00c9, kdy\u017e vyt\u00e1hl z mraz\u00e1ku ledov\u00e9 sklo. Kirk ani nemrkl a pivo tedy nalil do norm\u00e1ln\u00edch nemra\u017een\u00fdch sklenic. Kdy\u017e jsme se lou\u010dili, kamar\u00e1d Jirka se pt\u00e1: d\u011bl\u00e1\u0161 tu dlouho? Jen k\u00fdvl, jako \u017ee jo. A kolik lid\u00ed si tu za cel\u00e1 ta l\u00e9ta objednalo pivo v nemra\u017een\u00e9m skle? Kirk n\u00e1s pomalu sjel o\u010dima a pravil: no, asi tak&#8230; \u010dty\u0159i. Takov\u00ed jsme tam byli exoti. Ne, to si sem ale netahejme. \u017de ty americk\u00e9 badlajty, k\u016frsy, milerlajty a mikeloby \u010depuj\u00ed t\u0159i stupn\u011b ledov\u00e9 a je\u0161t\u011b do namra\u017een\u00fdch sklenic, to se d\u00e1 pochopit: skryje se tak nedobr\u00e1 chu\u0165, pop\u0159\u00edpad\u011b absence jak\u00e9koli chuti. Ale n\u00e1\u0161 bar s dobr\u00fdmi pivy to snad nepot\u0159ebuje. Nav\u00edc pivo o spr\u00e1vn\u00e9 teplot\u011b dostane od ledov\u00e9ho skla po\u0159\u00e1dnou pecku (teplotn\u00ed \u0161ok), kter\u00fd u\u0161lechtil\u00e9mu pivn\u00edmu n\u00e1poji rozhodn\u011b neprosp\u011bje.<\/p>\n<p>A jsme u teploty. D\u00e1 rozum, \u017ee \u010d\u00edm je pivo siln\u011bj\u0161\u00ed, tmav\u0161\u00ed, aromati\u010dt\u011bj\u0161\u00ed, \u010d\u00edm v\u00edc obsahuje exotick\u00fdch chmel\u016f, jin\u00fdch p\u0159\u00edm\u011bs\u00ed \u010di v\u00edce neje\u010dn\u00fdch slad\u016f, t\u00edm se m\u00e1 serv\u00edrovat teplej\u0161\u00ed. Ne ka\u017ed\u00fd bar m\u00e1 na ka\u017ed\u00fd pivn\u00ed styl vlastn\u00ed chladic\u00ed cestu, ale aspo\u0148 na dv\u011b \u010di t\u0159i teploty by \u010depovat um\u011bt m\u011bl. N\u00e1sleduj\u00edc\u00ed \u010d\u00edsla nepoch\u00e1zej\u00ed z \u017e\u00e1dn\u00e9 odborn\u00e9 publikace, jsou m\u00e1 vlastn\u00ed (a j\u00e1 r\u00e1d sp\u00ed\u0161e piva otev\u0159en\u011bj\u0161\u00ed, vo\u0148av\u011bj\u0161\u00ed a tedy malinko teplej\u0161\u00ed), tak\u017ee je m\u016f\u017eete bu\u010f akceptovat, nebo tak dva stupn\u011b uberte. Tedy: v\u00fd\u010depn\u00ed pivo asi 6 stup\u0148\u016f Celsia, le\u017e\u00e1ky \u010di letn\u00ed ejly 7 \u2013 8, tmav\u00e9 le\u017e\u00e1ky, p\u0161enice, belgick\u00e9 ejly, m\u00e4rzeny, v\u00eddn\u011b, kolsche, kellerbiery nebo krieky 9 \u2013 10, bocky, piva typu IPA, faro, gueuze a lambic kolem 12 a t\u011b\u017ek\u00e9 portery, stouty, trapistick\u00e1 piva, belgick\u00e9 dubbely a tripely nad 12, klidn\u011b i a\u017e 18 stup\u0148\u016f.<\/p>\n<p>Piva lze ale pod\u00e1vat i o malinko chladn\u011bj\u0161\u00ed, jednak ne ka\u017ed\u00fd spot\u0159ebitel je p\u0159ipraven na pivo teplotou takto obna\u017een\u00e9, jednak mnoho fajn\u0161mekr\u016f si r\u00e1do dolad\u00ed spr\u00e1vnou individu\u00e1ln\u00ed teplotu a\u017e v rukou. K tomu ostatn\u011b slou\u017e\u00ed i r\u016fzn\u00e9 typy pivn\u00edho skla. D\u017eb\u00e1nky s uchem, aby ruka le\u017e\u00e1k p\u0159\u00edli\u0161 neoh\u0159\u00e1la, tvarovan\u00e9 sklenice na p\u0161enice, aby si z\u00e1kazn\u00edk \u201emodlen\u00edm\u201c sv\u00fdmi dlan\u011bmi pivo naopak oh\u0159\u00e1l, nebo skla se stopkou, kter\u00e1 umo\u017e\u0148uj\u00ed jak pivo oh\u0159\u00e1t rukou p\u0159\u00edmo p\u0159es st\u011bnu, nebo vz\u00edt do prst\u016f za stopku a pivo nechat d\u00e9le chladn\u00e9.<\/p>\n<p>Sklo u\u017e je ale samostatn\u00e1 v\u011bda, tak\u017ee o n\u011bm podrobn\u011bji snad n\u011bkdy p\u0159\u00ed\u0161t\u011b. M\u00edsto pointy ale p\u0159eci jen jeden \u010di dva k\u00e1nonick\u00e9 z\u00e1kony: pivo pros\u00edm nikdy neserv\u00edrovat oleptan\u00e9 p\u011bnou zvn\u011bj\u0161ku sklenice. Kdo to m\u00e1 pak br\u00e1t do rukou?? V Belgii pivo p\u0159ed serv\u00edrov\u00e1n\u00edm pono\u0159\u00ed a\u017e po okraj do baz\u00e9nku, usu\u0161\u00ed podstavec ut\u011brkou a pak teprve pod\u00e1vaj\u00ed, ale to bychom asi cht\u011bli moc. U n\u00e1s posta\u010d\u00ed nenechat p\u011bnu p\u0159et\u00e9ci a rad\u011bji ji no\u017eem se\u0159\u00edznout. A pak ty ne\u0161\u0165astn\u00e9 t\u00e1cky. Jsou \u00fapln\u011b nutn\u00e9. Kdo si chce r\u00e1chat lokty v lou\u017e\u00edch piva? Tak\u017ee u\u017e \u017e\u00e1dn\u00e9 nepozorn\u00e9 stav\u011bn\u00ed piva deset centimetr\u016f vedle t\u00e1cku rovnou na st\u016fl.
