Rozd\u00edly byly velik\u00e9, nejdra\u017e\u0161\u00ed piva autor shledal ve Skandin\u00e1vii (pochopiteln\u011b, maj\u00ed tam nevy\u0161\u0161\u00ed spot\u0159ebn\u00ed da\u0148).<\/h3>\n<p><!--more--><\/p>\n<p>Skoro by \u010dlov\u011bk \u0159ekl, \u017ee to byly \u00fadaje zaj\u00edmav\u00e9. Zcela opr\u00e1vn\u011bn\u011b by se ptal \u2013 a to mluv\u00edte o Bentley, nebo o Dacii? Mluv\u00edte o limuz\u00edn\u00e1ch, SUV, kabrioletech, nebo minivanech? A vid\u00edte, u piva se neptal, o jak\u00e1 piva jde. P\u0159itom cenov\u00e9 rozd\u00edly u jednotliv\u00fdch pivn\u00edch styl\u016f jsou tak\u00e9 \u0159\u00e1dov\u00e9.<\/p>\n<p>Ne, v\u016fbec nen\u00ed jedno, o jak\u00e9m pivu se bav\u00edme. Existuje \u0159ada kucha\u0159ek a recept\u016f, ve kter\u00fdch najdete naprosto detailn\u00ed v\u00fd\u010det po\u017eadovan\u00fdch surovin \u2013 a pivo jako jednu z ingredienc\u00ed. Jen\u017ee jak\u00e9 pivo? To je asi jedno. Tak\u017ee vemte maso, p\u0159idejte n\u011bjakou zeleninu, k&nbsp;tomu n\u011bjak\u00e9 lu\u0161t\u011bniny a zalijte n\u011bjak\u00fdm pivem. To \u017ee je recept? No, ale jestli n\u00e1m vad\u00ed spojen\u00ed \u201en\u011bjak\u00e9 maso\u201c, mus\u00ed n\u00e1m i vadit mezi p\u0159\u00edsadami uveden\u00e9 \u201en\u011bjak\u00e9 pivo\u201d, prost\u011b pivo bez jak\u00e9koli charakteristiky. &nbsp; &nbsp; &nbsp; &nbsp; &nbsp;<\/p>\n<p>Stejn\u011b tak je dobr\u00e9 zab\u00fdvat se \u00favahou, jak\u00fd konkr\u00e9tn\u00ed pivn\u00ed styl si d\u00e1me k&nbsp;ob\u011bdu, podle toho, na \u010dem si zrovna pochutn\u00e1v\u00e1me. Ne prost\u011b \u201epivo\u201c. Tak\u00e9 n\u00e1m nesta\u010d\u00ed prost\u011b \u201ej\u00eddlo\u201c. A hledejme, co se k&nbsp;\u010demu hod\u00ed. Jak\u00e9 j\u00eddlo k&nbsp;jak\u00e9mu pivu, jak\u00e9 pivo k&nbsp;jak\u00e9mu j\u00eddlu. A zde je kl\u00ed\u010dov\u00fdm slovem p\u00e1rov\u00e1n\u00ed. Neexistuje j\u00eddlo, ke kter\u00e9mu by se nehodilo dobr\u00e9 pivo. A u\u017e v\u016fbec neexistuje j\u00eddlo, ke kter\u00e9mu by se nedal naj\u00edt ten spr\u00e1vn\u00fd pivn\u00ed styl tak, aby celek vytvo\u0159il ten prav\u00fd kulin\u00e1\u0159sk\u00fd z\u00e1\u017eitek.&nbsp;<\/p>\n<p>Na j\u00eddeln\u00edch l\u00edstc\u00edch mnoha restaurac\u00ed nalezneme u n\u011bkter\u00fdch polo\u017eek r\u016fzn\u00e1 doporu\u010den\u00e1 piva, velkou v\u011bt\u0161inou jsou ale ony kombinace \u010dist\u011b intuitivn\u00ed, zkr\u00e1tka, co se samo na prvn\u00ed pohled nab\u00edz\u00ed. Skoro nikdy nejde o dlouhodob\u011b vyzkou\u0161en\u00e9 a ov\u011b\u0159en\u00e9 kombinace \u010di o v\u00fdsledek pe\u010dliv\u00e9ho v\u00fdb\u011bru z mnoha mo\u017enost\u00ed.<\/p>\n<p>Hodn\u011b autor\u016f i praktik\u016f doporu\u010duje metodu, kter\u00e9 osobn\u011b \u0159\u00edk\u00e1m homop\u00e1rov\u00e1n\u00ed. Tedy sv\u016fj k sv\u00e9mu. Podobn\u00fd k podobn\u00e9mu. Prost\u011b p\u0159ekvapiv\u00e9 a\u017e v\u00fdst\u0159edn\u00ed kombinace, kter\u00e9 nedaj\u00ed dohromady jen prost\u00fd sou\u010det chut\u00ed, ale novou kvalitu, nov\u00fd kulin\u00e1\u0159sk\u00fd z\u00e1\u017eitek, nov\u00fd p\u0159\u00edb\u011bh. Jak by tedy mohly vypadat takov\u00e9 \u201ehetero\u201c kombinace?<\/p>\n<p>Za\u010dn\u011bme t\u011b\u017ek\u00fdmi tu\u010dn\u00fdmi j\u00eddly typu kachna \u010di sv\u00ed\u010dkov\u00e1. Za sebe k nim naprosto doporu\u010duji belgick\u00e9 spont\u00e1nn\u011b kva\u0161en\u00e9 kysel\u00e9 lambiky, krieky \u010di gueuze. Op\u011bt ka\u017ed\u00e9 sousto propl\u00e1chn\u011bme rad\u011bji leh\u010d\u00edm belgick\u00fdm ejlem nebo sv\u011b\u017e\u00edm p\u0161eni\u010dn\u00fdm pivem, ne\u017e abychom ho je\u0161t\u011b v\u00edc zahustili pivem pln\u00e9 chuti. Vznikl\u00e1 kombinace je udivuj\u00edc\u00ed svou pestrost\u00ed a z\u00e1bavnost\u00ed.<\/p>\n<p>K s\u00fdr\u016fm, zejm\u00e9na k t\u011bm s b\u00edlou pl\u00edsn\u00ed \u010di k parmez\u00e1novit\u00fdm kousk\u016fm, doporu\u010duji v\u00fdrazn\u00e9 extra chmelen\u00e9 tituly typu imperial IPA, nebo dokonce piva s jalape\u0148os a podobn\u00e9 divo\u010diny. S\u00fdr pohlad\u00ed, ost\u0159ej\u0161\u00ed pivo zase probere ze zasn\u011bn\u00ed. Ale pozor, proto\u017ee s\u00fdr\u016f je skoro tolik druh\u016f co piv, je t\u0159eba i zde zkou\u0161et a kombinovat. T\u0159eba s\u00fdry s modrou pl\u00edsn\u00ed v kombinaci s n\u011bjak\u00fdm siln\u011bj\u0161\u00edm trapistou v \u00fastech ho\u0159knou. P\u00e1rov\u00e1n\u00edm piv se s\u00fdry je zase proslaven\u00e9 opa\u010dn\u00e9 americk\u00e9 pob\u0159e\u017e\u00ed, konkr\u00e9tn\u011b pivovary ve Vermontu, t\u0159eba Schilling.<\/p>\n<p>A jsme u sladkost\u00ed. U nich panuje m\u00fdtus, \u017ee se k nim pivo nehod\u00ed. To mus\u00edm rozho\u0159\u010den\u011b odm\u00edtnout. Ale pozor, op\u011bt nesklouznout k nudn\u00e9 kombinaci kol\u00e1\u010d\u016f, sacher dortu \u010di makov\u00fdch \u0161i\u0161ek s k\u00e1vov\u00fdm stoutem nebo sladov\u00fdm tmav\u00fdm bockem. \u017d\u00e1dn\u00e1 takov\u00e1: sem pr\u00e1v\u011b p\u0159ekvapiv\u011b pat\u0159\u00ed \u010desk\u00fd le\u017e\u00e1k! Jen zkuste a budete se divit. Pivo s \u0159\u00edzem, p\u0159im\u011b\u0159enou ho\u0159kost\u00ed a pitelnost\u00ed skv\u011ble dopln\u00ed p\u0159etrv\u00e1vaj\u00edc\u00ed cukrov\u00e9 dozn\u00edv\u00e1n\u00ed.<\/p>\n<p>Takov\u00fdch kombinac\u00ed m\u016f\u017eu napsat je\u0161t\u011b mnoho, ale p\u0159ijdete na n\u011b jist\u011b sami. Pokud budete odv\u00e1\u017en\u00ed a vynal\u00e9zav\u00ed. Zkr\u00e1tka to chce nepodporovat chu\u0165 j\u00eddla podobnou chut\u00ed piva.
