U iniciativy ministerstva zem\u011bd\u011blstv\u00ed &#8211; kterou si po letech \u00fap\u011bnliv\u00fdch proseb vymodlili sami (hlavn\u011b ti men\u0161\u00ed) pivovarn\u00edci &#8211; zav\u00e9st m\u00edsto dosavadn\u00edho ozna\u010den\u00ed \u201ele\u017e\u00e1k\u201c pro 11 a 12stup\u0148ov\u00e1 piva term\u00edn \u201epln\u00e9 pivo\u201c naopak zcela v\u00fdjime\u010dn\u011b chv\u00e1l\u00edm.<\/p>\n<p><!--more--><\/p>\n<p><a href=\"https:\/\/www.ladislavjakl.cz\/wp-content\/uploads\/2016\/01\/052.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6346 \" src=\"https:\/\/www.ladislavjakl.cz\/wp-content\/uploads\/2016\/01\/052.jpg\" alt=\"\" width=\"491\" height=\"333\" \/><\/a><\/p>\n<p>A pro\u010d? Proto\u017ee dosavadn\u00ed \u00faprava je nesmysln\u00e1 a neodpov\u00edd\u00e1 sou\u010dasn\u00e9 realit\u011b na \u010desk\u00e9m pivn\u00edm trhu. Po l\u00e9ta sta\u010dilo ozna\u010dovat piva stup\u0148ovitost\u00ed a u jin\u00fdch pivn\u00edch styl\u016f, ne\u017e je \u010desk\u00fdch le\u017e\u00e1k, se prost\u011b dodala charakteristika onoho pivn\u00edho stylu. Bylo to sice v\u011bcn\u011b spr\u00e1vn\u00e9, ale nepraktick\u00e9. Kontrolo\u0159i pot\u0159ebovali \u0159adu kolonek a vy\u017eadovali je i po pivovarn\u00edc\u00edch. Co stupe\u0148, to kategorie.<\/p>\n<p>Kontrolor\u016fm sta\u010dily kolonky t\u0159i. Term\u00edn v\u00fd\u010depn\u00ed pivo zn\u00e1 ka\u017ed\u00fd, tak se j\u00edm ozna\u010dila piva pod 11 stup\u0148\u016f EPM. Pod v\u00fdrazem \u201especi\u00e1ln\u00ed pivo\u201c si sice m\u016f\u017ee p\u0159edstavit ka\u017ed\u00fd n\u011bco jin\u00e9ho, ale budi\u017e, bereme na v\u011bdom\u00ed, \u017ee se tak budou ozna\u010dovat piva nad 12 stup\u0148\u016f.<\/p>\n<p>U jeden\u00e1ctek a dvan\u00e1ctek ale \u00fa\u0159edn\u00edci \u2013 kte\u0159\u00ed v \u017eivot\u011b \u017e\u00e1dn\u00e9 jin\u00e9 pivn\u00ed styly evidentn\u011b nepoznali \u2013 ud\u011blali kardin\u00e1ln\u00ed chybu. P\u0159id\u011blily jim ozna\u010den\u00ed \u201ele\u017e\u00e1k\u201c. Tak se sice dvan\u00e1ctk\u00e1m a jeden\u00e1ctk\u00e1m kdysi \u0159\u00edkalo, ale to tu \u017e\u00e1dn\u00e9 jin\u00e9 pivn\u00ed styly neexistovaly a tak nikou nevadilo, \u017ee term\u00edn \u201ele\u017e\u00e1k\u201c je ozna\u010den\u00ed jednoho konkr\u00e9tn\u00edho pivn\u00edho stylu a ne ur\u010dit\u00e9 s\u00edly jak\u00e9hokoli piva. Tak se stalo, \u017ee se le\u017e\u00e1kem povinn\u011b musely za\u010d\u00edt ozna\u010dovat i piva, kter\u00e1 le\u017e\u00e1kem nejsou.<\/p>\n<p>Zkus\u00edm si pomoci jedn\u00edm p\u0159\u00edkladem. P\u0159edstavte si, \u017ee se po cel\u00e9 generace bude u n\u00e1s prod\u00e1vat jen jedna zna\u010dka auta: \u0161koda. Aby se lid\u00e9 vyznali v r\u016fzn\u00fdch modelech, zavede se ozna\u010den\u00ed \u0160koda 1 pro auta s objemem v\u00e1lc\u016f do jednoho litru, \u0160koda 2 od jednoho do dvou litr\u016f a \u0160koda 3 pro auta s motorem nad 2 litry. V\u0161ichni si na to zvyknou a bude jim v\u0161e naprosto jasn\u00e9.<\/p>\n<p>Jen\u017ee pak se na trhu objev\u00ed p\u00e1r fi\u00e1tk\u016f, saab\u016f a mercedes\u016f. A tak se fi\u00e1tky za\u0159ad\u00ed do kategorie \u0160koda 1, saaby budou \u0160koda 2 a mercedesy \u0160koda 3. Kupuj\u00edc\u00ed \u0159ekne: j\u00e1 bych si dal \u0160kodu 2, konkr\u00e9tn\u011b pros\u00edm typ saab. \u017de to je pitomost? Ano. A p\u0159esn\u011b to se u n\u00e1s p\u0159i sou\u010dasn\u00e9 \u00faprav\u011b d\u011bje s pivem.<\/p>\n<p>Pro\u010d povinn\u011b ozna\u010dovat jako le\u017e\u00e1k pivo, kter\u00e9 le\u017e\u00e1kem nen\u00ed?<\/p>\n<p>Po mnoho generac\u00ed u n\u00e1s neexistoval jin\u00fd pivn\u00ed styl, ne\u017e lager nebo tak\u00e9 pils, prost\u011b pr\u016fmyslov\u00fd le\u017e\u00e1k. Tento pom\u011brn\u011b mlad\u00fd pivn\u00ed styl (existuje teprve 174 let) d\u00edky sv\u00e9 cen\u011b, vzhledu, stabilit\u011b kvality a trvanlivosti (a tak\u00e9 technologick\u00e9 vhodnosti pro industri\u00e1ln\u00ed velkov\u00fdrobu) zv\u00e1lcoval b\u011bhem p\u00e1r des\u00edtek let cel\u00fd sv\u011btov\u00fd pivn\u00ed trh.<\/p>\n<p>Dosavadn\u00ed tradi\u010dn\u00ed piva byla zatla\u010dena na okraj a nov\u00e9 pivn\u00ed styly t\u00e9m\u011b\u0159 nevznikaly. A v jedn\u00e9 zemi, a to t\u00e9 na\u0161\u00ed (jestli j\u00ed tak je\u0161t\u011b sm\u00edme \u0159\u00edkat) toto v\u00e1lcov\u00e1n\u00ed bylo dokonce \u00fapln\u00e9 a stoprocentn\u00ed. P\u016fvodn\u00ed piva u n\u00e1s zmizela naprosto beze zbytku.<\/p>\n<p>Proto cel\u00e9 generace \u010desk\u00fd spot\u0159ebitel nic jin\u00e9ho neznal a \u010dasto jin\u00e9 pivn\u00ed styly skoro ani za opravdov\u00e1 piva nebyl ochoten pova\u017eovat. Jako kdyby v\u0161ichni jedli jen modern\u00ed hamburgery a star\u00e9 dobr\u00e9 sv\u00ed\u010dkov\u00e9 a knedlazelavep\u0159a vymizely z pam\u011bti.<\/p>\n<p>Proto b\u00fdvalo zbyte\u010dn\u00e9 p\u0159i kupov\u00e1n\u00ed piva rozli\u0161ovat pivn\u00ed styly, kdy\u017e byl k dispozici jen jeden. N\u011bkter\u00e9 spot\u0159ebitele zaj\u00edmal konkr\u00e9tn\u00ed pivovar, v\u011bt\u0161inu ale jen s\u00edla: tedy jde-li o v\u00fd\u010depn\u00ed (10 stup\u0148\u016f a m\u00e9n\u011b) le\u017e\u00e1ky (11 a 12) nebo speci\u00e1ly (nad 12). Zaj\u00edmalo to ale nikoli jen spot\u0159ebitele, n\u00fdbr\u017e hlavn\u011b kontrolory, bern\u00ed \u00fa\u0159ady a tv\u016frce z\u00e1vazn\u00fdch norem.<\/p>\n<p>Jen\u017ee v posledn\u00edch 20 letech se na n\u00e1\u0161 strh st\u00e1le \u010dast\u011bji a ve v\u011bt\u0161\u00edm mno\u017estv\u00ed dost\u00e1vaj\u00ed jednak ony star\u00e9, kdysi p\u016fvodn\u00ed pivn\u00ed styly, jednak styly \u00fapln\u011b nov\u00e9, kter\u00e9 ve sv\u011bt\u011b za\u010daly op\u011bt vznikat. U n\u00e1s dosud t\u00e9m\u011b\u0159 nezn\u00e1m\u00e9 pivn\u00ed styly za\u010daly produkovat i na\u0161e pivovary. Nejd\u0159\u00edv mikropivovary a v posledn\u00edch letech pod jejich tlakem i ty velk\u00e9 pr\u016fmyslov\u00e9.<\/p>\n<p>A vznikl stejn\u00fd probl\u00e9m, jako p\u0159i onom popisovan\u00e9m p\u0159\u00edkladu s povinn\u00fdm ozna\u010den\u00edm fiat\u016f jako \u0161kodovky. Slovo \u201ele\u017e\u00e1k\u201c v platn\u00e9 \u00fa\u0159edn\u00ed terminologii toti\u017e neznamen\u00e1 pivn\u00ed styl, jak plat\u00ed v terminologii pivovarnick\u00e9, ale ozna\u010duje ur\u010ditou \u201es\u00edlu\u201c, nebo tak\u00e9 plnost piva. Tedy vlastn\u011b jeho hustotu, mno\u017estv\u00ed pou\u017eit\u00e9ho sladu na ur\u010dit\u00fd objem piva (nepl\u00e9st s alkoholem, stejn\u011b siln\u00e1 piva mohou b\u00fdt v\u00edce prokva\u0161en\u00e1 a m\u00edt v\u00edce alkoholu, jin\u00e1 tolik prokva\u0161en\u00e1 nejsou a maj\u00ed naopak v\u00edce zbytkov\u00e9ho cukru a dal\u0161\u00edch l\u00e1tek \u2013 to je stejn\u00e9, jako u sladk\u00fdch a such\u00fdch v\u00edn).<\/p>\n<p>Dosavadn\u00ed byrokratick\u00fd terminologie tak nut\u00ed prodejce a producenty ozna\u010dovat jako le\u017e\u00e1ky i ta piva, kter\u00e1 s le\u017e\u00e1ky nemaj\u00ed nic spole\u010dn\u00e9ho. Jestli\u017ee m\u00e1 pivovar Herold kv\u016fli t\u00e9to povinnosti na n\u00e1lepce jednoho sv\u00e9ho piva n\u00e1pis \u201esv\u011btl\u00fd p\u0161eni\u010dn\u00fd le\u017e\u00e1k\u201c je to tot\u00e9\u017e, jako auto ozna\u010den\u00e9 \u0160koda 2 \u2013 saab.<\/p>\n<p>Tento nelogick\u00fd anachronismus n\u00e1m byl vnucen a p\u0159es odpor pivovarn\u00edk\u016f tu stra\u0161\u00ed u\u017e l\u00e9ta jen proto, \u017ee se v\u017edy zvednou hlasy ve stylu: na co m\u011bnit to, na co jsme zvykl\u00ed, co tak p\u011bkn\u011b funguje. M\u011bn\u00ed se, a naprosto zbyte\u010dn\u011b, nesmysln\u011b a \u0161kodliv\u011b tis\u00edce v\u011bc\u00ed ka\u017edou chv\u00edli. Ale ozna\u010dovat jako le\u017e\u00e1ky piva p\u0161eni\u010dn\u00e1, \u010di typu stout, ale, vit, season, kriek, \u010di IPA jen proto, \u017ee jsme \u201etak zvykl\u00ed\u201c, v\u016fbec ned\u00e1v\u00e1 smysl a je zcela matouc\u00ed.<\/p>\n<p>Mo\u017en\u00e1 ten chaos n\u011bkomu vyhovuje, hlavn\u011b t\u011bm velk\u00fdm, kte\u0159\u00ed se nov\u00fdch styl\u016f boj\u00ed a \u010dasto d\u011blaj\u00ed, \u017ee o nich ani nev\u011bd\u00ed. A nov\u00e1 terminologie, kter\u00e1 by byrokracii dala do souladu s technologickou terminologi\u00ed, by kone\u010dn\u011b uk\u00e1zala, \u017ee le\u017e\u00e1k nen\u00ed jedin\u00e9 pivo na sv\u011bt\u011b, ale \u017ee strom jm\u00e9nem pivo m\u00e1 tis\u00edce v\u011btv\u00ed a v\u011btvi\u010dek a le\u017e\u00e1k je jen jednou z nich. Na nejv\u011bt\u0161\u00edm festivalu americk\u00fdch mikropivovar\u016f GABF v Denveru je le\u017e\u00e1k \u010desk\u00e9ho typu jen jednou z 92 hodnocen\u00fdch kategori\u00ed a nikoho by nenapadlo ozna\u010dovat jako le\u017e\u00e1ky i ty ostatn\u00ed kategorie jen proto, \u017ee maj\u00ed zrovna n\u00e1hodou tak\u00e9 dvan\u00e1ct stup\u0148\u016f.<\/p>\n<p>Nebojuji konkr\u00e9tn\u011b za ozna\u010den\u00ed \u201epln\u00e9 pivo\u201c, i kdy\u017e se mi celkem l\u00edb\u00ed. V ka\u017ed\u00e9m p\u0159\u00edpad\u011b je \u201epln\u00e9 pivo\u201c obecn\u011bj\u0161\u00ed vymezen\u00ed a vejdou se pod n\u011bj stejn\u011b siln\u00e1 piva naprosto r\u016fzn\u00fdch styl\u016f. Ale pokud n\u011bkdo vymysl\u00ed hez\u010d\u00ed ozna\u010den\u00ed, pro\u010d ne, stejn\u011b jde jen o mechanick\u00fd p\u0159eklad z n\u011bm\u010diny. Hlavn\u011b u\u017e pry\u010d se sou\u010dasn\u00fdm neudr\u017eiteln\u00fdm stavem.<\/p>\n<p>Mo\u017en\u00e1 mnoz\u00ed z v\u00e1s pivo nepijete a m\u00e1te rad\u011bji v\u00edno. Co v\u00e1s p\u0159i koupi v\u00edna zaj\u00edm\u00e1 hlavn\u011b? Jestli je b\u00edl\u00e9, \u010derven\u00e9 \u010di r\u016f\u017eov\u00e9, tich\u00e9 \u010di \u0161um\u00edc\u00ed, such\u00e9 \u010di sladk\u00e9, odkud je. A\u017e v posledn\u00ed \u0159ad\u011b, jakou m\u00e1 hustotu nebo pod\u00edl alkoholu. A te\u010f si p\u0159edstavte, \u017ee n\u011bkdo, kdo cel\u00fd \u017eivot pil jen b\u00edl\u00e9 sladk\u00e9, bude za jedin\u00e9 rozli\u0161en\u00ed v\u00edna protla\u010dovat pouze procento alkoholu a ledov\u00e9 v\u00edno p\u0159ik\u00e1\u017ee zna\u010dit b\u00edl\u00e9 sladk\u00e9 18procentn\u00ed. A to je to s pivem je\u0161t\u011b hor\u0161\u00ed, tam je prodejce dokonce nucen za\u0159azovat sv\u016fj produkt do nespr\u00e1vn\u00e9, ji\u017e k jin\u00e9mu \u00fa\u010delu existuj\u00ed \u0161katulky. A rozd\u00edly mezi pivn\u00edmi styly jsou ohromn\u00e9, p\u0159edev\u0161\u00edm podle typu kva\u0161en\u00ed, volby surovin i technologick\u00e9ho postupu. Jist\u011b nejsou men\u0161\u00ed ne\u017e mezi stoln\u00edm a dezertn\u00edm v\u00ednem \u010di t\u0159eba portsk\u00fdm.<\/p>\n<p>Kdyby bylo po m\u00e9m, povinn\u00e9 zna\u010den\u00ed piv a jejich za\u0159azov\u00e1n\u00ed do kategori\u00ed bych zru\u0161il \u00fapln\u011b a nechal bych na spot\u0159ebiteli, a\u0165 si s\u00e1m \u0159ekne, jak\u00fd \u00fadaj je pro n\u011bj d\u016fle\u017eit\u00fd. Ale dokud je kv\u016fli dan\u00edm a norm\u00e1m takov\u00e9 ozna\u010den\u00ed povinn\u00e9, a\u0165 nen\u00ed aspo\u0148 \u00fapln\u011b \u0161patn\u011b.<\/p>\n<p>A na z\u00e1v\u011br: jak\u00e9 pivo je nejlep\u0161\u00ed na sv\u011bt\u011b? Pln\u00e9.
