Ale v z\u00e1sad\u011b se v\u0161echny tyto n\u00e1zory d\u011bl\u00ed do dvou skupin: je lep\u0161\u00ed homop\u00e1rov\u00e1n\u00ed, nebo heterop\u00e1rov\u00e1n\u00ed?<\/div>\n<p><!--more--><\/p>\n<div id=\"art-text\" class=\"text\">\n<p>\u0158e\u010d bude o p\u00e1rov\u00e1n\u00ed r\u016fzn\u00fdch piv s r\u016fzn\u00fdmi j\u00eddly. Nebo r\u016fzn\u00fdch j\u00eddel s r\u016fzn\u00fdmi pivy. Ale za\u010dnu s moudrem \u010d\u00edslo jedna:&nbsp;<strong>ne v\u0161echno se hod\u00ed k pivu, ale pivo se hod\u00ed ke v\u0161emu<\/strong>. Neexistuje j\u00eddlo, ke kter\u00e9mu by se nehodilo dobr\u00e9 pivo. A u\u017e v\u016fbec neexistuje j\u00eddlo, ke kter\u00e9mu by se nedal naj\u00edt ten spr\u00e1vn\u00fd pivn\u00ed styl tak, aby celek vytvo\u0159il ten prav\u00fd kulin\u00e1\u0159sk\u00fd z\u00e1\u017eitek.<\/p>\n<p>M\u016f\u017eeme za\u010d\u00edt t\u00edm, \u017ee b\u011bhem v\u00edcechodov\u00e9ho ob\u011bda \u010di ve\u010de\u0159e lze nasadit postupn\u011b r\u016fzn\u00e1 piva. Mezi pivy lze naj\u00edt vhodn\u00fd aperitiv, vhodn\u00e9 pit\u00ed k hlavn\u00edmu chodu i vhodn\u00fd digestiv. Stejn\u011b tak lze vybrat r\u016fzn\u00e9 pivo k sn\u00eddani, jin\u00e9 o ob\u011bdu a \u00fapln\u011b jin\u00e9 zase k ve\u010de\u0159i.<\/p>\n<p>Nutno uznat, \u017ee p\u00e1rov\u00e1n\u00ed j\u00eddel s r\u016fzn\u00fdmi pivn\u00edmi styly je dosud discipl\u00ednou mladou a nedo\u0161lo u n\u011bj zat\u00edm ke shod\u011b n\u011bjak\u00fdch v oboru respektovan\u00fdch autorit. Na j\u00eddeln\u00edch l\u00edstc\u00edch mnoha bar\u016f a restaurac\u00edch nalezneme u n\u011bkter\u00fdch polo\u017eek r\u016fzn\u00e1 doporu\u010den\u00e1 piva, velkou v\u011bt\u0161inou jsou ale ony kombinace \u010dist\u011b intuitivn\u00ed ve smyslu, co se samo na prvn\u00ed pohled nab\u00edz\u00ed, nebo dokonce vych\u00e1zej\u00edc\u00ed z toho, jak\u00e1 piva pot\u0159ebuje doty\u010dn\u00fd podnik zrovna udat. Skoro nikdy nejde o dlouhodob\u011b vyzkou\u0161en\u00e9 a ov\u011b\u0159en\u00e9 kombinace \u010di o v\u00fdsledek pe\u010dliv\u00e9ho v\u00fdb\u011bru z mnoha mo\u017enost\u00ed.<\/p>\n<p>Hodn\u011b autor\u016f i praktik\u016f doporu\u010duje metodu, kter\u00e9 \u0159\u00edk\u00e1m&nbsp;<strong>homop\u00e1rov\u00e1n\u00ed.&nbsp;<\/strong>Tedy sv\u016fj k sv\u00e9mu. Podobn\u00fd k podobn\u00e9mu. K j\u00eddlu typick\u00e9mu pro ur\u010dit\u00fd region pivo ze stejn\u00e9ho regionu. Ve smyslu r\u010den\u00ed o p\u0159itahuj\u00edc\u00edch se protikladech. Prost\u011b&nbsp;<strong>p\u0159ekvapiv\u00e9 a\u017e v\u00fdst\u0159edn\u00ed kombinace<\/strong>, kter\u00e9 nedaj\u00ed dohromady jen prost\u00fd sou\u010det chut\u00ed, ale novou kvalitu, nov\u00fd kulin\u00e1\u0159sk\u00fd z\u00e1\u017eitek, nov\u00fd p\u0159\u00edb\u011bh.<\/p>\n<p>A na regiony v\u016fbec nekoukat. \u017de se mnohdy k vep\u0159ov\u00fdm hod\u016fm, k bavorsk\u00fdm, \u010desk\u00fdm a rakousk\u00fdm selsk\u00fdm j\u00eddl\u016fm doporu\u010duj\u00ed v\u00fdhradn\u011b le\u017e\u00e1ky? Prost\u011b jen proto, \u017ee je v t\u011bch kraj\u00edch doma jak le\u017e\u00e1k, tak i ony vep\u0159ov\u00e9 venkovsk\u00e9 speciality? Jen\u017ee vep\u0159ov\u00e9 se v t\u011bch kon\u010din\u00e1ch jedlo u\u017e p\u0159ed tis\u00edci lety, zat\u00edmco le\u017e\u00e1k je modern\u00ed industri\u00e1ln\u00ed pivo mlad\u00e9 asi stejn\u011b, jako dal\u0161\u00ed p\u0159evratn\u00e9 vyn\u00e1lezy 19. stolet\u00ed. Tak\u017ee po cel\u00e9 v\u011bky se v na\u0161ich st\u0159edoevropsk\u00fdch kon\u010din\u00e1ch t\u0159eba k zabija\u010dk\u00e1m pila piva \u00fapln\u011b jin\u00e1, tradi\u010dn\u00ed, svrchn\u011b kva\u0161en\u00e1. Ale ani to neoprav\u0148uje k n\u00e1zoru, \u017ee tedy k vep\u0159ov\u00e9mu d\u00e1vejme jen pln\u00e1 p\u0161eni\u010dn\u00e1 piva \u010di hutn\u00fd bock, a to jen proto, \u017ee p\u0159esn\u011b to se u n\u00e1s pilo v minul\u00fdch stalet\u00edch.<\/p>\n<p>Jak by tedy mohly vypadat takov\u00e9 \u201ehetero\u201c kombinace? Za\u010dn\u011bme t\u011bmi t\u011b\u017ek\u00fdmi tu\u010dn\u00fdmi j\u00eddly typu husa \u010di knedlo zelo vep\u0159o, kdy\u017e u\u017e jsme je nakousli. Za sebe k nim naprosto doporu\u010duji belgick\u00e9 spont\u00e1nn\u011b kva\u0161en\u00e9 kysel\u00e9 lambiky, krieky \u010di gueuze (geuze). Zkusit m\u016f\u017eete i leh\u010d\u00ed zastudena chmelen\u00e9 ejly (session IPA, summer ale). Va\u0161i host\u00e9 budou udiveni, jak rozmanit\u00e9 po\u017eitky jim kombinace tu\u010dnosti s lehkost\u00ed \u010di kyselost\u00ed nab\u00eddne. M\u00edsto toho, abychom tu\u010dn\u00e9 j\u00eddlo zapl\u00e1cli \u201etu\u010dn\u00fdm\u201c pivem, ud\u011blejme p\u0159esn\u00fd opak: odleh\u010deme ho!<\/p>\n<p>A co ryby? K t\u011bm tu\u010dn\u011bj\u0161\u00edm op\u011bt klidn\u011b leh\u010d\u00ed ejly, k mo\u0159sk\u00fdm plod\u016fm \u010di k leh\u010d\u00edm ryb\u00e1m zkusme p\u0159ekvapiv\u011b stout. Koneckonc\u016f existuje i pivn\u00ed podstyl oyster (\u00fast\u0159icov\u00fd) stout a mohu v\u00e1s ujistit, \u017ee je to kombinace skoro orgastick\u00e1. A na tal\u00ed\u0159 doporu\u010duji p\u0159idat vo\u0148av\u00fd k\u0159en.<\/p>\n<p>A zelenina \u010di lehk\u00e9 sal\u00e1ty? Zase zkusme protiklad: t\u011b\u017ek\u00fd porter. Po ka\u017ed\u00e9m soust\u011b se host bude cht\u00edt nap\u00edt pln\u00e9ho slad\u0161\u00edho kusu, po ka\u017ed\u00e9m dou\u0161ku zase uv\u00edt\u00e1 osv\u011b\u017een\u00ed nov\u00fdm soustem zeleniny s vinn\u00fdm octem.<\/p>\n<p>Co stejky, \u017eeb\u00edrka, k\u0159id\u00fdlka a hamburgery? Op\u011bt ka\u017ed\u00e9 sousto propl\u00e1chn\u011bme rad\u011bji leh\u010d\u00edm belgick\u00fdm ejlem nebo sv\u011b\u017e\u00edm p\u0161eni\u010dn\u00fdm pivem, ne\u017e abychom ho je\u0161t\u011b v\u00edc zahustili pivem pln\u00e9 chuti. Vznikl\u00e1 kombinace je udivuj\u00edc\u00ed svou pestrost\u00ed a z\u00e1bavnost\u00ed.<\/p>\n<p>K s\u00fdr\u016fm, zejm\u00e9na k t\u011bm s b\u00edlou pl\u00edsn\u00ed \u010di k parmez\u00e1novit\u00fdm kousk\u016fm, doporu\u010duji v\u00fdrazn\u00e9 extra chmelen\u00e9 tituly typu imperial IPA nebo dokonce piva s jalape\u0148os a podobn\u00e9 divo\u010diny. S\u00fdr pohlad\u00ed, ost\u0159ej\u0161\u00ed pivo zase probere ze zasn\u011bn\u00ed.<\/p>\n<p>A jsme u sladkost\u00ed. U nich panuje m\u00fdtus, \u017ee se k nim pivo nehod\u00ed. To mus\u00edm rozho\u0159\u010den\u011b odm\u00edtnout. Ale pozor, op\u011bt nesklouznout k nudn\u00e9 kombinaci kol\u00e1\u010d\u016f, sacher dortu \u010di makov\u00fdch \u0161i\u0161ek s k\u00e1vov\u00fdm stoutem nebo sladov\u00fdm tmav\u00fdm bockem. \u017d\u00e1dn\u00e1 takov\u00e1: sem pr\u00e1v\u011b pat\u0159\u00ed \u010desk\u00fd le\u017e\u00e1k! Jen zkuste, a budete se divit. Pivo s \u0159\u00edzem, p\u0159im\u011b\u0159enou ho\u0159kost\u00ed a pitelnost\u00ed skv\u011ble dopln\u00ed p\u0159etrv\u00e1vaj\u00edc\u00ed cukrov\u00e9 dozn\u00edv\u00e1n\u00ed.<\/p>\n<p>Takov\u00fdch kombinac\u00ed m\u016f\u017eu napsat je\u0161t\u011b mnoho, ale p\u0159ijdete na n\u011b jist\u011b sami. Zkr\u00e1tka to chce&nbsp;<strong>nepodporovat chu\u0165 j\u00eddla podobnou chut\u00ed piva<\/strong>. To jen unud\u00ed a zahlu\u0161\u00ed p\u0159ednosti oboj\u00edho. Byst\u0159eme si smysly p\u0159ekvapiv\u00fdmi zvraty v\u016fn\u00ed a chut\u00ed a nebojme se experimentovat.<\/p>\n<p>Na z\u00e1v\u011br se m\u016f\u017eeme vr\u00e1tit k t\u00e9matu lehce zm\u00edn\u011bn\u00e9mu v \u00favodu. Jak\u00fdm pivem den za\u010d\u00edt, jak\u00fdm zakon\u010dit? Jak\u00fdm pivem odstartovat bohat\u0161\u00ed hostinu a jak\u00fdm uzav\u0159\u00edt? Por\u00e1nu nen\u00ed dobr\u00e9 se nal\u00e9vat litry leh\u010d\u00edch v\u00fd\u010depn\u00edch piv, kter\u00e1 se pij\u00ed na \u017e\u00edze\u0148. S na\u017ebrun\u011bn\u00fdm \u017ealudkem se do nov\u00e9ho dne moc dob\u0159e nevykro\u010d\u00ed. \u00dapln\u011b nejlep\u0161\u00ed sn\u00eddan\u00ed je stout. Ostatn\u011b i zde existuje speci\u00e1ln\u00ed podstyl: breakfest stout. Takov\u00e1 sn\u00eddan\u011b chutn\u00e1 i t\u011bm, co r\u00e1no pij\u00ed \u010daj, i t\u011bm, co rad\u011bji k\u00e1vu. A co jako \u0161l\u00e1ftru\u0148k? Mohlo by n\u00e1s to sv\u00e1d\u011bt k n\u011bjak\u00e9mu barely aged stoutu, porteru, tmav\u00e9mu bocku nebo podobn\u00fdm kus\u016fm evokuj\u00edc\u00edm dobr\u00e9 portsk\u00e9. Za sebe ale tvrd\u00edm, \u017ee na dobrou noc nem\u00e1 chybu, kdy\u017e m\u00e1 pivo hodn\u011b IBU. Tedy n\u011bjak\u00e1 ultra ho\u0159k\u00e1 IPA. Chmel um\u00ed toti\u017e stejn\u011b tak probrat jako zklidnit, podle toho, co t\u011blo zrovna pot\u0159ebuje.<\/p>\n<p>A co m\u016f\u017ee b\u00fdt pivn\u00edm aperitivem? N\u011bjak\u00fd p\u011bkn\u011b o zuby drhnouc\u00ed lambik nebo leh\u010d\u00ed siln\u011b chmelen\u00fd ejl tuhle slu\u017ebu zvl\u00e1dnou bezchybn\u011b. Probud\u00ed chut\u011b i pot\u0159ebu honem za\u010d\u00edt j\u00edst. A co na z\u00e1v\u011br menu jako digestiv? Tady bych u\u017e se nebr\u00e1nil t\u011b\u017ek\u00e9mu porteru nebo hodn\u011b pln\u00e9 t\u0159eba i polotmav\u00e9 p\u0161enici.<\/p>\n<p>Neru\u010d\u00edm za to, \u017ee p\u0159esn\u011b tyhle kombinace budou va\u0161im z\u00e1kazn\u00edk\u016fm chutnat nejv\u00edc, mil\u00ed barmani. Zvyk a p\u0159edsudky m\u00edvaj\u00ed \u017eeleznou ko\u0161ili. Ale rozhodn\u011b budete origin\u00e1ln\u00ed, kdy\u017e jim p\u0159edstav\u00edte&nbsp;<strong>kombinace rad\u011bji vlastn\u00ed, p\u0159ekvapiv\u00e9 a protikladn\u00e9, ne\u017e ty, co napadnou ka\u017ed\u00e9ho&nbsp;<\/strong>na prvn\u00ed dobrou.
