I kdy\u017e u piv jsou ty m\u00f3dn\u00ed vlny pon\u011bkud specifick\u00e9.<\/div>\n<p><!--more--><\/p>\n<div id=\"art-text\" class=\"text\">\n<p>Pivn\u00ed m\u00f3dn\u00ed vlny nep\u0159ich\u00e1zej\u00ed z Pa\u0159\u00ed\u017ee, ale vlastn\u011b skoro v\u0161echny sem s n\u011bjak\u00fdm zpo\u017ed\u011bn\u00edm (kter\u00e9 se st\u00e1le zkracuje, na to pozor!) do\u0161plouchnou z USA. Ostatn\u011b z Ameriky p\u0159i\u0161la sama m\u00f3da mikropivovar\u016f, nov\u00fdch pivn\u00edch styl\u016f, znovuobjevov\u00e1n\u00ed t\u011bch zapomenut\u00fdch, zkr\u00e1tka cel\u00e1 ta ohromn\u00e1 sou\u010dasn\u00e1 renesance pivn\u00edho \u017eivota, do t\u00e9 doby spokojen\u011b zavla\u017eovan\u00e9ho jen le\u017e\u00e1ky z velk\u00fdch fabrik.<\/p>\n<p>A v tom tkv\u00ed ona specifi\u010dnost pivn\u00edch m\u00f3d. \u0158\u00edkat o Americe, \u017ee objevuje Ameriku, je docela z\u00e1bavn\u00e1 h\u0159\u00ed\u010dka, ale je to tak. Krom\u011b skute\u010dn\u011b origin\u00e1ln\u011b americk\u00fdch pivn\u00edch styl\u016f, kter\u00e9 odtamtud pravideln\u011b zaplavuj\u00ed cel\u00fd pivn\u00ed sv\u011bt, ob\u010das z Ameriky p\u0159ijde i m\u00f3da styl\u016f, kter\u00e9 jsou v Evrop\u011b d\u00e1vno doma, a k jejich objevu p\u0159ece \u017e\u00e1dn\u00e9 Ameri\u010dany nepot\u0159ebujeme. Zd\u00e1nliv\u011b nepot\u0159ebujeme. Ameri\u010dan\u00e9 se z objevu pro n\u011b nezn\u00e1m\u00fdch evropsk\u00fdch styl\u016f raduj\u00ed jak mal\u00e9 d\u011bti, cht\u011bj\u00ed v nich vyniknout a \u010dasto jim daj\u00ed i nov\u00fd kab\u00e1t. A tak n\u00e1s d\u00edky nim ob\u010das uhod\u00ed do o\u010d\u00ed, \u017ee to, co tu d\u00e1vno zn\u00e1me, stoj\u00ed za nov\u00fd pohled.<\/p>\n<p>Americk\u00e1 pivn\u00ed revoluce za\u010dala v roce 1975, kdy byl v San Francisku zalo\u017een prvn\u00ed novodob\u00fd mikropivovar sv\u011bta, pivovar Anchor. A postavil svou my\u0161lenku na tom, \u017ee za\u010dne pou\u017e\u00edvat americk\u00e9 chmely (zejm\u00e9na cascade), kter\u00e9 pro svou p\u0159\u00edli\u0161nou aromati\u010dnost a v\u00fdraznou ho\u0159kost st\u00e1ly do t\u00e9 doby zcela mimo pivovarnick\u00e9 vyu\u017eit\u00ed, a jako b\u00e1zi pro sv\u016fj experiment opr\u00e1\u0161il do t\u00e9 doby okrajov\u00fd lok\u00e1ln\u00ed anglick\u00fd pivn\u00ed styl India Pale Ale. Jeho nov\u00e1 americk\u00e1 verze byla v\u0161ak (d\u00edky americk\u00fdm chmel\u016fm) mnohem ho\u0159\u010dej\u0161\u00ed a aromati\u010dt\u011bj\u0161\u00ed, a tedy i odv\u00e1\u017en\u011bj\u0161\u00ed ne\u017e anglick\u00fd pravzor. Jen\u017ee se stal div. Na\u0161li se lid\u00e9, kte\u0159\u00ed tyhle \u201eho\u0159k\u00e9 utrejchy\u201c uv\u00edtali jako sv\u011btlo v nudn\u00fdch pivn\u00edch temnot\u00e1ch. A revoluce mohla za\u010d\u00edt. Po Americe vznikaly stovky a tis\u00edce mal\u00fdch \u0159emesln\u00fdch pivovar\u016f a jejich m\u00f3da za\u010dala p\u0159eskakovat do cel\u00e9ho sv\u011bta. A nesena byla pr\u00e1v\u011b p\u0159edev\u0161\u00edm americkou podobou stylu IPA.<\/p>\n<p>M\u00f3da mikropivovar\u016f o dvacet let pozd\u011bji p\u0159i\u0161la i k n\u00e1m, ale p\u0159\u00edli\u0161 ho\u0159k\u00e9 pivo, nav\u00edc chmelen\u00e9 zastudena, nebylo v tradi\u010dn\u011b le\u017e\u00e1kov\u00e9 zemi zpo\u010d\u00e1tku p\u0159ijato. Vypuklo to a\u017e za dal\u0161\u00edch deset patn\u00e1ct let, kdy n\u00e1s \u010desk\u00e9 verze IPA u\u017e p\u0159\u00edmo zaplavily. A\u017e se za\u010dalo \u0159\u00edkat, \u017ee kdo nechmel\u00ed zastudena (a jasn\u011b\u017ee americk\u00fdmi chmely!), ten jako kdyby nebyl. Jen\u017ee to u\u017e Amerika \u017eila nov\u00fdmi m\u00f3dami. A ty u\u017e k n\u00e1m p\u0159ich\u00e1zej\u00ed daleko rychleji. Co\u017e je d\u00e1no i t\u00edm, \u017ee se po\u010det mikropivovar\u016f u n\u00e1s za deset let zdesetin\u00e1sobil (z necel\u00fdch pades\u00e1ti na skoro p\u011bt set) a nov\u00e9 m\u00f3dy m\u00e1 kdo uchopit. A tak\u00e9 pivn\u00ed publikum je pou\u010den\u011bj\u0161\u00ed, zv\u011bdav\u011bj\u0161\u00ed a odv\u00e1\u017en\u011bj\u0161\u00ed. Honi\u010dka za t\u00edm, kdo ud\u011bl\u00e1 je\u0161t\u011b ho\u0159\u010dej\u0161\u00ed, citrusov\u011bj\u0161\u00ed a prysky\u0159ic\u00ed vo\u0148av\u011bj\u0161\u00ed ipu, ta u\u017e ust\u00e1v\u00e1 i u n\u00e1s a kdo chce b\u00fdt trendy, ok\u00e1zale a znalecky u\u017e nased\u00e1 na aktu\u00e1ln\u011bj\u0161\u00ed posledn\u00ed vlak.<\/p>\n<p>Co tedy fr\u010d\u00ed dnes? Prvn\u00ed \u201epoipovou\u201c vlnou byly bezpochyby p\u0161enice. Tady bych ale vid\u011bl sp\u00ed\u0161 vliv N\u011bmecka a Belgie ne\u017e Ameriky. P\u0161enice byla p\u0159ed p\u00e1r lety na ka\u017ed\u00e9m pivn\u00edm rohu. Co u\u017e ale p\u0159i\u0161lo opravdu z Ameriky, to byly stouty. A to stouty v americk\u00e9 podob\u011b, tedy i ty extr\u00e9mn\u011b ho\u0159k\u00e9. Objev, \u017ee takov\u00fd stout m\u016f\u017ee m\u00edt v\u00edc IBU (jednotek ho\u0159kosti) ne\u017e IPA, ani\u017e by ze sklenice chmel sk\u00e1kal do obli\u010deje, byl dost podstatn\u00fd a obohacuj\u00edc\u00ed. A co teprve stout sta\u0159en\u00fd v sudu po n\u011bjak\u00e9m jin\u00e9m n\u00e1poji (po whisty, bourbonu, v\u00ednu, tequille)! To bych \u0159ekl, \u017ee je vlna, kter\u00e1 je\u0161t\u011b u n\u00e1s nedostoupila vrcholu a barman, kter\u00fd chce j\u00edt s dobou, by si takov\u00fdch p\u00e1r kousk\u016f m\u011bl do lednice po\u0159\u00eddit. Existuj\u00ed i \u00fasporn\u011bj\u0161\u00ed verze tohoto stylu. D\u0159ev\u011bn\u00e9 hobliny se v ohniv\u00e9 vod\u011b vymaceruj\u00ed a pak str\u010d\u00ed do le\u017e\u00e1ck\u00e9ho tanku. Nen\u00ed to \u00fapln\u011b ono, ale cena je mnohem ni\u017e\u0161\u00ed a senzorick\u00fd z\u00e1\u017eitek to d\u00e1 velmi slu\u0161n\u00fd (kdy\u017e to n\u011bkdo um\u00ed).<\/p>\n<p>Amerikou, kterou Amerika objevuje nyn\u00ed, posledn\u00edch asi osm let, je belgie. Belgick\u00e9 pivn\u00ed styly. Ameri\u010dani jsou p\u0159esv\u011bd\u010deni, \u017ee um\u011bj\u00ed v\u0161echno nejl\u00edp a \u017ee tedy um\u00ed b\u00fdt i belgi\u010dt\u011bj\u0161\u00ed ne\u017e Belgi\u010dani. A tak se pustili do sv\u00fdch verz\u00ed trapist\u016f, abbey, belgick\u00fdch ejl\u016f a tak\u00e9 kysel\u00e1\u010d\u016f, v\u010detn\u011b t\u011bch s ovocn\u00fdm dochucen\u00edm. U t\u011bch kyselou\u0161\u016f se zastavme.<\/p>\n<p>Jejich p\u016fvodn\u00ed domov je pochopiteln\u011b v Belgii, kde origin\u00e1ln\u00ed podoba (piva typu lambic) kvas\u00ed pouze spont\u00e1nn\u011b (bez vyp\u011bstovan\u00fdch kvasnic) a tedy v konkr\u00e9tn\u00edch mikrofl\u00f3rn\u00edch podm\u00ednk\u00e1ch. Ameri\u010dani sice zkou\u0161eli olupovat i t\u0159\u00edsky z tr\u00e1m\u016f belgick\u00fdch lambick\u00fdch pivovar\u016f (ani nev\u00edm, kde se takov\u00e1 t\u0159\u00edska vzala v m\u00e9 dom\u00e1c\u00ed pivot\u00e9ce), ale mikrofl\u00f3ru prost\u011b nep\u0159enese\u0161. A tak zkou\u0161eli izolovat kvasnice s podobn\u00fdm efektem um\u011ble. Vylezly jim z toho (krom\u011b tis\u00edc\u016f nepoveden\u00fdch pokus\u016f) docela osv\u011b\u017euj\u00edc\u00ed, p\u0159\u00edjemn\u011b nakysl\u00e9 kousky. Nejv\u00edc se chytil tenhle styl v onom americk\u00e9m severoz\u00e1padn\u00edm chobotu (od New Yorku na sever), zvan\u00e9m Nov\u00e1 Anglie. Podle mne \u2013 cestoval jsem tam po pivovarech poprv\u00e9 v \u017eivot\u011b loni a se Z\u00e1padem se to moc srovnat ned\u00e1 \u2013 se tak stalo proto, \u017ee stouty a piva typu IPA v kvalit\u011b jako na Z\u00e1pad\u011b v Nov\u00e9 Anglii prost\u011b neum\u011bj\u00ed, tak ud\u011blali znouzectnost a dos\u00e1hli i ofici\u00e1ln\u00ed registrace takto vznikl\u00fdch kvasnic coby New England Yeast. N\u011bkdy do t\u011bchto piv d\u00e1vaj\u00ed kv\u016fli z\u00e1kalu a povzbuzen\u00ed sv\u011b\u017e\u00edho efektu p\u0161enici. N\u011bkter\u00e9 pivovary jsou p\u0159\u00edmo na farm\u00e1ch a to se pak snadno tvrd\u00ed, \u017ee to nen\u00ed divn\u00e9, co tam c\u00edt\u00edte, to je p\u0159ece ta prav\u00e1 farm\u00e1\u0159sk\u00e1 chu\u0165 a v\u016fn\u011b.<\/p>\n<p>A tenhle styl se k n\u00e1m val\u00ed posledn\u00ed dva roky, nap\u0159\u00edklad pod ozna\u010den\u00edm NEIPA. (New England IPA). Pro\u010d ne? V\u0161e se d\u00e1 d\u011blat \u0161patn\u011b i dob\u0159e a dobr\u00fd kyselou\u0161 tohoto typu je p\u0159\u00edjemnou vlo\u017ekou mezi p\u0159\u00edli\u0161 ho\u0159k\u00fdmi pivy. Zaj\u00edmav\u00e9 je u\u017e to, \u017ee se americk\u00e1 podoba kyselou\u0161\u016f u n\u00e1s chyt\u00e1 l\u00e9pe ne\u017e belgick\u00fd origin\u00e1l. Ten je asi jen pro otrl\u00e9.<\/p>\n<p>Na co je tedy t\u0159eba se v barech p\u0159ipravit? Co bude hitem p\u0159\u00ed\u0161t\u00edch dvou t\u0159\u00ed let? Podle mne ur\u010dit\u011b barrel aged stouty a pr\u00e1v\u011b americk\u00e9 verze belgi\u010dan\u016f (i v \u010desk\u00e9m proveden\u00ed). Mihnou se okrajov\u011bj\u0161\u00ed m\u00f3dy, ty ale nep\u0159evl\u00e1dnou. T\u0159eba m\u00f3da d\u00fd\u0148ov\u00fdch piv u n\u00e1s u\u017e i prol\u00e9tla, mo\u017en\u00e1 se je\u0161t\u011b vr\u00e1t\u00ed, ale na\u0161inec nem\u00e1 k t\u00e9 surovin\u011b takov\u00fd v\u0159el\u00fd vztah jako Ameri\u010dani, tak\u017ee tady z pumpkinu nikdo bl\u00e1znit asi nebude. Stejn\u011b to vid\u00edm s m\u00f3dou chilli a jalape\u0148os piv, to se sp\u00ed\u0161 ujme u Ma\u010far\u016f. A m\u00f3da nitro skon\u010dila d\u0159\u00edv, ne\u017e za\u010dala.<\/p>\n<p>Zahraju si ale na prognostika. Co za takov\u00fdch p\u011bt \u010di osm let? Leckter\u00e9 p\u0159edpov\u011bdi u\u017e mi nevy\u0161ly, tak pro\u010d bych to neriskl zas. Vr\u00e1t\u00edme se z Ameriky a objev\u00edme N\u011bmecko a t\u00edm i trochu svou vlastn\u00ed minulost. Tak\u017ee se u n\u00e1s za\u010dnou ne pouze v experiment\u00e1ln\u00edm m\u011b\u0159\u00edtku d\u011blat k\u00f6lsche, altbiery, kellerbiery a po chmelov\u00fdch letech si vzpomeneme i na v\u016fni sladu. Nebo ne? Uvid\u00edme.<\/p>\n<p>Na z\u00e1v\u011br n\u011bco k sam\u00e9mu fenom\u00e9nu m\u00f3dn\u00edch pivn\u00edch vln. Nepohor\u0161oval bych se nad nimi. Pom\u00e1haj\u00ed n\u00e1m \u010dasto objevovat (nebo znovuobjevovat) nov\u00e9 sv\u011bty. V\u017edy se to s nimi sice kr\u00e1tkodob\u011b p\u0159est\u0159el\u00ed, ale pak se vlna uklidn\u00ed a n\u011bco po n\u00ed z\u016fstane.
