S t\u00edm si ka\u017ed\u00fd zku\u0161en\u00fd barman porad\u00ed, ale p\u00e1r drobn\u00fdch post\u0159eh\u016f snad nebude na\u0161kodu.<\/div>\n<p><!--more--><\/p>\n<div id=\"art-text\" class=\"text\">\n<p>Hlavn\u011b se nesm\u00ed prezentace aktu\u00e1ln\u00edho pivn\u00edho sortimentu podcenit. Nenechat z\u00e1kazn\u00edky, aby se museli vypt\u00e1vat (ale p\u0159itom mus\u00edme b\u00fdt p\u0159ipraveni na p\u0159\u00edpadnou ot\u00e1zku dob\u0159e odpov\u011bd\u011bt), ale umo\u017enit jim, aby si v\u00fdb\u011br pro\u0161li sami a ud\u011blali si sv\u00e9 \u201epivn\u00ed menu\u201c v klidu podle sebe.<\/p>\n<p>V Americe se ujaly tabule, na kter\u00e9 se barevn\u00fdmi k\u0159\u00eddami p\u00ed\u0161e aktu\u00e1ln\u00ed pivn\u00ed sortiment, a stejn\u00fd zp\u016fsob u\u017e p\u0159esko\u010dil i k n\u00e1m. Bu\u010f jednotliv\u00e9 barvy slou\u017e\u00ed pro odli\u0161en\u00ed pivn\u00edch styl\u016f (jedna barva pro le\u017e\u00e1ky, dal\u0161\u00ed pro ejly, dal\u0161\u00ed pro belgie&#8230;), nebo se jednou barvou p\u00ed\u0161ou n\u00e1zvy piv, druhou a t\u0159et\u00ed barvou r\u016fzn\u00e9 charakteristiky. K t\u011bm se je\u0161t\u011b dostaneme.<\/p>\n<p>P\u0159\u00edjemn\u00e9 a p\u0159ehledn\u00e9 pro z\u00e1kazn\u00edky jsou i velk\u00e9 obrazovky na baru a po lok\u00e1le. Jejich obsah b\u00fdv\u00e1 n\u011bkde i ke sta\u017een\u00ed p\u0159es m\u00edstn\u00ed wifi, pop\u0159\u00edpad\u011b on-line dostupn\u00fd i na webu \u010di fejsbuku podniku. Za sebe bych jen prosil v\u011bt\u0161\u00ed p\u00edsmena, do t\u011bchto podnik\u016f nechod\u00ed jen ml\u00e1de\u017e, ale i strejci m\u00e9ho v\u011bku a bez brejl\u00ed.<\/p>\n<p>Co bych v\u016fbec nedoporu\u010doval a osobn\u011b nem\u00e1m r\u00e1d (a nejsem v tom s\u00e1m), jsou r\u016fzn\u00e9 ty listovac\u00ed kn\u00ed\u017ee\u010dky. Sice to d\u00e1 mo\u017enost p\u0159ilo\u017eit ke ka\u017ed\u00e9mu pivu del\u0161\u00ed text, av\u0161ak v\u011bt\u0161inou b\u00fdvaj\u00ed ty texty stejn\u011b jaksi hodn\u011b amat\u00e9rsk\u00e9, hlavn\u011b je ale ono listov\u00e1n\u00ed nep\u0159ehledn\u00e9, proto\u017ee piva nevid\u00edte najednou a po\u0159\u00e1d se vrac\u00edte, pokud chcete porovnat tituly a rozhodnout si po\u0159ad\u00ed. (Takov\u00fd bruselsk\u00fd bar Delirium m\u00e1 sice pivn\u00ed menu jak tlust\u00fd telefonn\u00ed seznam, se kter\u00fdm by \u0161lo zab\u00edt st\u0159edn\u011b velk\u00e9ho psa, jen\u017ee u nich je to tradice u\u017e dvacet let, tedy od doby, kdy se bar dostal do Guinnessovy knihy rekord\u016f coby hospoda s nejv\u011bt\u0161\u00ed pivn\u00ed nab\u00eddkou na sv\u011bt\u011b \u2013 p\u0159es dva tis\u00edce kousk\u016f). Stejn\u011b tak nedoporu\u010duji r\u016fzn\u00e9 ty stojac\u00ed par\u00e1v\u00e1nky. Na stole \u010di na baru by toho m\u011blo p\u0159ek\u00e1\u017eet co mo\u017en\u00e1 nejm\u00e9n\u011b.<\/p>\n<p>Trochu na milost bych vzal jistou odvozeninu t\u011bchto na stole le\u017e\u00edc\u00edch kr\u00e1m\u016f, tou je denn\u00ed pivn\u00ed list, p\u0159ipevn\u011bn\u00fd klipsnou k n\u011bjak\u00e9 tvrd\u00e9 podlo\u017ece (plexisklu), na n\u011bm pivo za pivem v\u010detn\u011b charakteristik plus prostor na pozn\u00e1mky. To je bezva n\u00e1vod k z\u00e1bav\u011b. I kdy\u017e se v\u00e1m pak m\u016f\u017ee st\u00e1t (jako t\u0159eba v pivovaru Three Floyds v Indian\u011b), \u017ee pokud po\u017e\u00e1d\u00e1te k menu o tu\u017eku a p\u00ed\u0161ete si pozn\u00e1mky u\u017e k des\u00e1t\u00e9mu dvan\u00e1ct\u00e9mu titulu, za\u010dnou v\u00e1s chodit okukovat, a kdy\u017e ve fin\u00e1le sjedete komplet menu 24 polo\u017eek, p\u0159ijdou si v\u00e1s i vyfotit.<\/p>\n<p>No, stejn\u011b se ka\u017ed\u00fd majitel \u010di barman rozhodne ohledn\u011b formy prezentace piv podle sv\u00fdch mo\u017enost\u00ed a vkusu. Daleko d\u016fle\u017eit\u011bj\u0161\u00ed je,&nbsp;<strong>CO<\/strong>je dobr\u00e9 o sv\u00fdch pivech z\u00e1kazn\u00edkovi sd\u011blovat. V tom je podle mne skv\u011bl\u00fdm p\u0159\u00edpadem Aliance P.I.V. (pivn\u011b inteligentn\u00edch v\u00fd\u010dep\u016f), co\u017e je voln\u00e9 sdru\u017een\u00ed \u010desk\u00fdch a moravsk\u00fdch multitap\u016f, kter\u00e9 se vyzna\u010duje pr\u00e1v\u011b jednotnou a st\u00e1lou prezentac\u00ed nab\u00edzen\u00fdch piv. D\u011blaj\u00ed to formou tzv. pivn\u00edch list\u016f. Ka\u017ed\u00e9 pivo m\u00e1 sv\u016fj list a listy jsou vyv\u011b\u0161en\u00e9 nad barem nebo na n\u011bjak\u00e9 n\u00e1st\u011bnce. Kdy\u017e pivo dojde, list se sund\u00e1, kdy\u017e se naraz\u00ed nov\u00e9, vyv\u011bs\u00ed se nov\u00fd list. List je p\u0159edti\u0161t\u011bn\u00fd, jen se v\u017edy vypln\u00ed p\u0159\u00edslu\u0161n\u00e9 kolonky. Co m\u00e1 takov\u00fd spr\u00e1vn\u00fd pivn\u00ed list obsahovat?<\/p>\n<p>Na prvn\u00edm m\u00edst\u011b pln\u00fd n\u00e1zev piva tak, jak ho uv\u00e1d\u00ed v\u00fdrobce. Zadruh\u00e9 jm\u00e9no pivovaru (sta\u010d\u00ed obchodn\u00ed jm\u00e9no, ne pln\u00fd n\u00e1zev firmy, jde p\u0159ece jen o spot\u0159ebitele, ne celn\u00ed \u00fa\u0159ad). Za jm\u00e9nem pivovaru je t\u0159eba uv\u00e9st s\u00eddlo, tedy m\u011bsto (vesnici) pop\u0159\u00edpad\u011b zemi, jde-li o import. Nejsme sice u v\u00edna, ale t\u0159eba u belgi\u00ed by bylo dobr\u00e9 uv\u00e9st, zda jde o Brabant, nebo lokalizovat pivo do Vl\u00e1mska \u010di Valonska. U americk\u00fdch piv pak jm\u00e9no st\u00e1tu, p\u0159eci jen v dob\u011b vlny NEIPA je pro z\u00e1kazn\u00edka zaj\u00edmav\u00e9, zda jde opravdu o st\u00e1t Nov\u00e9 Anglie, tedy o origin\u00e1l. Zaj\u00edmavou kategori\u00ed jsou ko\u010dovn\u00e9, nebo tak\u00e9 l\u00e9taj\u00edc\u00ed pivovary, tedy ty, kter\u00e9 nemaj\u00ed st\u00e1l\u00e9 s\u00eddlo. Zde je t\u0159eba na nich vymoci \u00fadaj, kde (u koho, ve kter\u00e9m pivovaru) doty\u010dnou v\u00e1rku provedli.<\/p>\n<p>Dal\u0161\u00edm podstatn\u00fdm \u00fadajem je informace o pivn\u00edm stylu. Rozhodn\u011b nesta\u010d\u00ed \u010dlen\u011bn\u00ed podle platn\u00e9 \u010desk\u00e9 legislativy, proto\u017ee ta vych\u00e1z\u00ed z pivn\u00edho sortimentu z dob tak p\u0159ed pades\u00e1ti lety. Pokud v\u00fdrobce za\u0159azen\u00ed odbyde, je t\u0159eba ho p\u0159im\u011bt, aby dodan\u00e9 pivo stylem za\u0159adil p\u0159esn\u011b. I kdyby to m\u011blo zabrat celou v\u011btu. A mezi n\u00e1mi \u2013 ono to i l\u00e9pe vypad\u00e1: \u010d\u00edm slo\u017eit\u011bj\u0161\u00ed popis pivn\u00edho stylu, t\u00edm pivo vypad\u00e1 jako v\u011bt\u0161\u00ed rarita.<\/p>\n<p>D\u00e1le uv\u00e1d\u00edme stup\u0148ovitost v jednotk\u00e1ch EPM (extrakt p\u016fvodn\u00ed mladiny). U n\u011bkter\u00fdch piv s t\u00edm budeme m\u00edt probl\u00e9m, ale to sprav\u00ed dodate\u010dn\u00fd dotaz na v\u00fdrobce nebo dodavatele. Je nutno tak\u00e9 uv\u00e9st obsah alkoholu v objemov\u00fdch procentech. Nejen kv\u016fli tomu, aby z\u00e1kazn\u00edk zv\u00e1\u017eil, kolik snese, ale tak\u00e9 aby p\u0159i porovn\u00e1n\u00ed alkoholu se stup\u0148ovitost\u00ed poznal, jestli jde o pivo hluboce prokva\u0161en\u00e9 (a tedy v chuti leh\u010d\u00ed), nebo prokva\u0161en\u00e9 m\u00edrn\u011b (a tedy pln\u011bj\u0161\u00ed). Zejm\u00e9na u tmav\u00fdch piv prosp\u011bje v\u011bci uveden\u00ed i barvy v jednotk\u00e1ch EBC, ale to v\u00e1m d\u00e1 jen m\u00e1lo pivovar\u016f. Zejm\u00e9na u piv typu IPA je skoro nutn\u00e9 uv\u00e9st ho\u0159kost v jednotk\u00e1ch IBU nebo EBU, proto\u017ee ho\u0159kost tento pivn\u00ed styl prod\u00e1v\u00e1.<\/p>\n<p>Bylo by tak\u00e9 nanejv\u00fd\u0161 spr\u00e1vn\u00e9, kdyby byl uveden i jmenovit\u011b sl\u00e1dek, kter\u00fd pivo sp\u00e1chal, a pokud mo\u017eno i autor receptury. U\u017e proto, \u017ee n\u011bkter\u00e1 jm\u00e9na jsou sama o sob\u011b tou nejlep\u0161\u00ed reklamou. Sice u n\u00e1s fluktuace mezi sl\u00e1dky nedosahuje \u00farovn\u011b fluktuace novin\u00e1\u0159\u016f mezi redakcemi, p\u0159eci jen je ale jasn\u00e9, \u017ee si sl\u00e1dek (nebo autor receptury) nese sv\u00e9 know-how sebou a objev\u00ed-li se jinde, znalci v\u011bd\u00ed, co asi mohou \u010dekat.<\/p>\n<p>Pokud na pivn\u00edm listu zb\u00fdv\u00e1 je\u0161t\u011b m\u00edsto, lze uv\u00e9st n\u011bjak\u00e9 zaj\u00edmavosti. U ochucen\u00fdch piv t\u0159eba informaci o p\u0159\u00edsad\u00e1ch, u piv typu IPA pou\u017eit\u00e9 chmely (zejm\u00e9na u\u017eit\u00e9 zastudena). Tady bych dodal, \u017ee u tzv. single hop piv (ejly, IPA, AM lagery), se u\u017eit\u00fd chmel uv\u00e9st prost\u011b mus\u00ed, proto\u017ee jinak cel\u00e1 jednochmelovost nem\u00e1 smysl. Tato piva se d\u011blaj\u00ed pr\u00e1v\u011b jen proto (i s v\u011bdom\u00edm, \u017ee nebudou zcela vyv\u00e1\u017een\u00e1), aby z\u00e1kazn\u00edk mohl rozli\u0161it vlastnosti jednotliv\u00fdch chmelov\u00fdch odr\u016fd.<\/p>\n<p>No, radit barman\u016fm, aby na konec napsali je\u0161t\u011b cenu, to je asi zbyte\u010dn\u00e9. M\u00edsto toho dod\u00e1m p\u0159\u00e1n\u00ed, aby n\u011bjak\u00e9ho st\u0159elen\u00e9ho regul\u00e1tora nenapadlo zav\u00e9st i do tohoto byznysu povinnost uv\u00e1d\u011bt cenu za litr, proto\u017ee to pak ty dvoudeckov\u00e9 ochutn\u00e1vkov\u00e9 kousky t\u0159eba vybran\u00fdch americk\u00fdch, d\u00e1nsk\u00fdch, holandsk\u00fdch nebo i \u0161pi\u010dkov\u00fdch \u010desk\u00fdch stout\u016f skoro nikdo nepil. Nebo ano? Snad ano, kvalita nen\u00ed zadarmo.<\/p>\n<p>Tak na zdrav\u00ed.
